We are blessed to live in such an amazing area where we have some of the tastiest produce right on our door step. As such, all of our ingredients and supplies are sourced from the UK, with many from Sussex itself.
Such amazing produce requires proper care and responsible practices. Being conscious of our environmental impact is one of the fundamental beliefs behind Cairovan.
We strive to be ethical, community-minded and environmentally conscious. Here’s how.
All the lamb we use is free range and sourced from Stoneywish, our family farm in East Sussex. My Nephew Michael and his family has been farming this land for five generations and are passionate about animal welfare, with the lambs having acres of land to roam.
We use the legs and shoulders for our slow roasted wraps and the offcuts are made into our spiced chipolatas and kofta.All our delicious outdoor raised chicken comes from our local village butchers. Family run A Twine Butchers In Hassocks provide us with high quality fresh British chicken. Andrew and his team are passionate about sourcing locally and are always keen to tell us about the farms they work with and source their produce from.
All our halloumi comes from the guys at The Cheese Man.
Based in Brighton The Cheese Man are passionate about cheese and fine foods, and as a local family run company they are proud to promote local cheeses.
Ever mindful of food miles and the impact on the environment, they work closely with local cheese makers and have produced a guide to develop local awareness of quality cheeses from the surrounding areas.

Our free-range organic eggs are supplied to us by the lovely hens over at The Mac’s Farm. The Mac’s are our amazing farming neighbours in Ditchling. This family are fourth generation organic egg farmers. They really love what they do, and we love it too! Especially when they provide us some seriously tasty double yokers!

Our incredible Fruit and veg comes from Jeremy Two in Henfield. Run by local Greengrocer Jeremy Shotter who has over 30 years’ experience in the trade.
Many of their suppliers are local which is great for keeping the food miles down, but the real focus is finding quality, independent suppliers. “We like to support small British businesses and you won’t find any of our products in any supermarkets” said Jeremy.

When it comes to beans, we team up with Hodmedods, a supplier who source sustainable beans and grains from British farms. They are particularly interested in searching out lesser known foods, like our very own fava beans. With their supply, we create our traditional Egyptian falafel and our hearty breakfast.

There is no point in having mouth-watering local free-range produce only to serve it in a plastic container! The packaging for our food was chosen specially for the fact that it is fully compostable. We are partnered with Enviropack, a trusted supplier of eco-friendly, disposable food containers from ethical sources.

To produce our Halloumi Fries and our Falafel, we need a steady supply high quality oil. For this, we are proud to have Olleco supplying our oil. They are a company that turn all of our used waste oil into bio fuel. This not only recycles the oil but stops it from ending up in land fill – truly impressive!

We provide a couple of services but are happy to tailor either of them to your personal wants and specifications.
1) Hire the van
For your outside events (including garden parties, weddings etc) the cairovan team will come to your venue and serve our menu through the hatches of our eye-catching van. This can be done on either a pre-paid or pay as you go basis.
2) Cook from your home
For dinner parties, birthdays, and just why not (?!), we offer a personal dining service from your kitchen. Serving an array of meze dishes to your table, eating in true Egyptian style! We will lay your table, serve your wine, and tidy up, so you can concentrate on the important things, like eating and drinking!

I cook my lamb using Bubba Mansour’s recipe. This man lived to eat! His passion and excitement for food was contagious. His cooking rules were simple, cook slow, cook low and garlic, garlic, garlic… so that is what I do! Cooked for 10 hours the shoulder and leg joins falls from the bone, its mouthwateringly good!
All the lamb I use is free range and is sourced from our family farm. We firmly believe that a happy lamb makes a tasty lamb. Like the lambs, we too grew up roaming these fields, falling in ditches and getting chased by geese.

Shawarma has definitely stood the test of time by simply being delicious, and can still be found served in the streets and restaurants across Egypt.
To cook our tasty chicken shawarma we of course stick to our important rule of cook slow, cook low and garlic, garlic, garlic." But before we do we first marinate our British chicken thighs in Yoghurt, garlic and fragrant aromatic spices. Once cooked our tender meat is ready to be stacked high on soft warm khobez and crisp salad!
Topped with pomegranate seeds, pomegranate Molasses, fresh cut mint and Egyptian tahini sauce.

Next up is Taameyya (Falafel to you and me).
Falafel has humble beginnings over 1000 years ago as a peasant food. Our traditional Egyptian Taameyya is made using fava beans and plenty of fresh herbs and garlic. My patties are soft, bright green and cake-like in texture with a crisp brown shell. Their authenticity is thanks to a stint at my family’s local street vendor in Cairo. They are packed full of flavour and border on illuminous!
Served with tahini, spicy chilli sauce, dill, pomegranates, spiced pickled red cabbage and crisp iceberg lettuce all contained in a warm soft flatbread.
